I tried making marmalade again.
Mum gave me a bag of lemons, even though I already had a pile, so I decided to have another go.
I’d already been to the shops to buy some jars, so that was sorted. This time I bought a bag of white sugar and pretty much repeated the exercise from before, only I had more of an idea of what to expect regarding the wrinkle test. So I cooked the mixture for the prescribed 20 minutes at 800W on the induction cooker, with about 5 minutes at 500W, just to be sure.
The mixture turned out a lot lighter than the first batch and considerably less viscous.
I tried a slice of toast and it was a great improvement. The dark taste I experienced in the first batch was not there. After having marmalade on toast for breakfast, I can say this batch is pretty good.
